Zany Zeus ricotta and spinach tortellini, hazelnut, edamame, smoked pumpkin velouté.
Festival Dish: Longbush pork belly, slow-cooked on a wood-fired rotisserie with Mela apple cider purée, sprouting broccoli, and toasted almonds.
Pan-seared salmon, green pea and tomato broth, pearl barley, black garlic pistou, gruyère cheese.
Spelt, barley and squash risotto, goat’s cheese, sage and burnt butter.
Apple variations served with buckwheat and sage ice cream.
Char-grilled caramel pineapple, pink peppercorns, with coconut and banana sorbet.
